- 4 medium boiled potatoes
- 1 cup blanched spinach puree
- 2 medium onions chopped fine
- 2 medium tomatoes chopped fine
- 1/2 of big capsicum chopped fine
- 1/2 cup green peas (fresh or frozen)
- 2 cups water
- 1 large green chilli
- 8-9 garlic cloves
- for Spice powders:
- 1/2 tsp red chilli powder
- 1 tsp coriander cumin powder
- 1/4 tsp turmeric
- 2 tsp pav bhaji masala
- 2 tbsp amul butter
- 2 tbsp oil
- to taste Salt
- for garnishing:
- 200 grams chopped coriander
- 2 large onions chopped fine
- some Tomato slices
- few Lemon wedges
- as required Amul butter
- as required Pav buns
Steps to make to make Hariyali Pav bhaji
- Blanch spinach and puree it.
- Grind green chillies and garlic cloves with 2 tbsp water to a paste.
- Keep the peas,chopped capsicum and boiled mashed potatoes ready.
- Heat oil in a pan. Add chopped onions and saute. Next saute with the chilli garlic paste. Next add the chopped capsicum and saute nicely.
- Add green peas and 2 tbsp water. Pressure cook for 2 whistles.
- Add chopped tomatoes,spice powders except pav bhaji masala and salt.
- Mash with a masher as it's cooking
- Add the pav bhaji masala.Add the mashed potatoes and continue mashing with the masala
- Add spinach puree. Then goes in 2 cups of water.
- Add a blob if butter.Simmer and cook for 10 minutes..
- Squeeze 1/2 a lemon. Simmer for a minute and switch off.
- Toast the paste with generous amount if butter on hot tawa. Keep the onion and lemon wedges ready.
- Garnish with freshly chopped onions,freshly chopped coriander,a blob of butter,lemon wedges, tomato slices and butter toasted pavs.
